Shazly Ayesh, Director of the Supply Directorate in the Red Sea Governorate, confirmed that the bakeries in Hurghada have already begun to develop the bread system supported by the use of technology, by cutting the “bread” loaf with laser technology, to produce a loaf of bread automatically, which will make the production’s quality and weight conform to legal specifications. .
Ayesh also confirmed that the Ministry of Supply is encouraging bakery owners to convert to the fully automated system, and one of the most prominent features of the automated bakery is that it produces 10,000 loaves of loaves per hour and eliminates crowding.
He also said that the way the automated bakery works is through a number of stages, the most important of which is the cutting stage, which consists of cutting the dough into small discs, and after that the rolling stage and the fermentation stage, after which the loaf passes through the conveyors until it reaches the fire house, and after that the last stage is the ventilation process and the citizen receives the bread. The catering director confirmed that the development process is at the expense of the bakery owner, and the government’s role is to encourage him and give him advantages such as increasing his share after conducting a study.
